My New Love Affair…

I once lived with a roommate who had them planted around her back patio and I have since forgotten how beautiful they are.

Until I was at Home Depot yesterday looking at paint and got this sudden urge to go look at the house plants. It may be raining sideways outside but I am determined to make sure it feels like spring inside…despite the fire we have blazing in our fireplace from the time we get up to the time we go to bed, I’m slowly adding more an more colors to our surrounding living space to brighten our home and our mood!

While I was cleaning out a drawer last week I happen to come across a zip lock baggy full of some of my great grandma Maggie’s old handkerchiefs and broaches.

It made me think of the infamous poem at the beginning of this post. The blue lace handkerchief is something I always knew I’d carry with me in my wedding day (something old, something borrowed, and something blue). My great grandma Maggie was a very special person to me. So much so that I have been planning to name my first daughter after her for as long as I can remember.

I’m trying to think of ways to use the rest of the vintage goodies in the baggy but for now, they are just fun for me to look at and think fondly of the great grandma whose home always smelled of bacon grease and had the best jewelry to dress up in as a child.

5 Small Spring Changes to Revamp Your Home

I don’t know about you but I am dying to make some serious changes to our home now that we are into Spring but like most people, we are on a nice little budget and I have to get a little more creative with how I do things.

I don’t think that a budget should be limiting though. I’ve been back in Seattle this past weekend and spent a little time with my best friend Brooke who also happens to be incredibly talented in all things design related. Seriously, you should see her home. It’s INCREDIBLE! And…it leaves me inspired to make a few, inexpensive changes to add a little color, a little more of D and me, and a whole lot more love to our ever evolving country home!

Just like me, Brooke has the mentality that it doesn’t have to be expensive to be creative and beautiful or relect you and your family. While we were sitting around sipping on some wine the other night, Brooke and I chatted about all the things you can do to your home to add a little change that wont break your bank account. Here are a few easy and inexpensive ways to change it up when things get a little, well, boring. I know I am definitely doing a few of these in the next few weeks!

Destination One: Ho Chi Minh and Hoi An

I can’t believe our trip has already come and gone! Eight months of planning and waiting and it’s all over and we are back at home and I’m starring out the window on the third day of spring looking at the three inches of snow accumulated last night. Sad face :(

Although I love the snow, I LOVED the 90 degree weather and 100%  humidity we were in as well!

Don’t be sad, I say to myself. Now I get to relive my trip all over again by sharing it with you!

Where shall I begin? Hmm, well, we all know how it began really. With this! 

So, I will begin after this part of the story and start here:

This was my first time EVER flying in b.class. We happened to have enough airline miles between the two of us (it’s kind of scary to think of how much we had to spend over the last couple years to get there!).  I have to admit though, I have been ruined. I already forewarned D that I have officially been spoiled and there is no going back.

After about 4 glasses of Champagne and a couple Bloody Mary’s (who doesn’t love a good old Bloody Mary on a plane?) we were off and flying! Just kidding! I only had TWO glasses of Champagne! Anyway, in celebration of our engagement we did part take in a few adult bevs and then because we left LAX at midnight, feel asleep only to awake right before landing in Hong Kong. I wish! Neither D or I slept all that much but that’s okay cause we lounged out and watched a few movies, slept a little, and then landed in Hong Kong to transfer to Ho Chi Minh City 13 hours later!

As I’ve mentioned before, I lived in Taiwan about two years ago and thus the shock of Asia upon arriving wasn’t as eye opening to me as it was to D. But, I LOVED watching him with wide-eyed amazement as we walked out into the open air and 100% humidity to wait for our taxi to take us to our hotel. Not only were we sleep deprived but a little out of our sorts from the time difference. We arrived in Ho Chi Minh around 7AM.

Have any of you been to SE Asia? Goodness, there are so many distinct traits that I love about it. The smell in the air (hard to explain but once you’ve smelt it, it will forever be ingrained in your mind), the thousands of motorbikes passing you by, the way the taxi drivers drive (me holding on for dear life praying that I make it to my hotel in one piece), the noise, the craziness, the bright lights and signs. I could go on and on.

When we arrived at our hotel we had to wait a bit for our room so we sat down for lunch and discussed what we were going to do for the rest of the day. When we were planning our trip, for some reason or another we decided that we would leave Ho Chi Minh the next day and go north to Hoi An and work our way up. We thought, for reasons I can’t remember, that we wouldn’t really want to stay in a big city for more then a day because we’d be jet lagged and overwhelmed. I know. I know. If we could do it over, we would have stayed in Ho Chi Minh for a few days then worked our way north. Shoulda, Coulda, Woulda!

After we got settled in our room, we decided to walk around a bit to try and shake off some of the jet lag. We didn’t get any pictures of the city. Lame, I know but in our defense, we were so stinkin’ out of it. I’m surprised we even made it back to our hotel after our walk! When we did though we found ourselves covered in a nice layer of sweat and decided it would be refreshing to take a little dip in the pool. And that is what we did…right before our massages. It was the least we could do for ourselves after a long fight :) .

After our swim, massage and a quick bit to eat for dinner we decided amongst ourselves that it was in fact late enough for us to go to bed. Proud of ourselves that we even stayed up as late as we did, we crawled into bed and fell into a deep and restful sleep at 6:59PM.

At some point this was me:

Me: “Babe? Are you awake?”

D: “Yep. Wide. What time is it? We should get up and get ready” (We had a 8AM flight mind you)

Me: “2:30AM”

(this little trend lasted about five days, each day going to bed and waking a tiny bit later.)

To kill some time we decided to face time D’s mom who was house-sitting for us with her best friend for the first week of our trip. After chatting with them for a bit and talking to the dogs who had no idea what to think of us talking to them from an iPad, we decided to just watch TV until it was time to get ready and leave.

We left Ho Chi Minh where it was 90+ degrees…see, bright sunny skies! Oh how I had been craving warmth and sun!

After a quick little plane ride of about an hour, we arrived in Danang (central Vietnam) and were met with 50 degree and drizzle.

See, rain and drizzle… Oh how I was not craving this!

But, I was determined that it was only going to get better from here. There was always tomorrow and I just knew those blue skies and bright sun from Ho Chi Mihn were dying to come out and play with us in Hoi An.

If you haven’t heard of Hoi An it is largely known for it’s famous streets lined with tailor shop after tailor shop where you can literally have anything you want made. They’re ability to recreate your favorite article of clothing brings people from all over and leaves most of them needing to buy an extra duffel bag to get everything they purchased back home. This is all great and wonderful if you are a shopper. Which I am not. In fact, D and I laugh because HE is way more into shopping then I ever have been. But I can appreciate it all.

As we drove the hour long taxi ride from Danang to Hoi An we sat in silence and once again griped the door handles for dear life. If we made it to Hoi An in one piece it was ALREADY better there!

I should mention that one of the things D and I really wanted from this trip was to fly by the seat of our pants. We didn’t want to have to make arrangements prior to arriving certain places. We thought that it would add some adventure to our travels since our lives are so planned back in the states. Mistake number one.

We had ran into two Canadian women at the airport and decided that since we were all going to the same place that we’d just share the cost of a taxi and drive together. They had booked a hotel so when we arrived in Hoi An we just had the taxi driver drop us off in front of their hotel. After saying good-bye to the two ladies we stood in the middle of the street realizing for the first time we had absolutely no stinkin’ idea where we were!

What we didn’t realize was we were just coming off of one of the busiest times of year traveling around SE Asia and as we went from hotel to hotel we soon began to see the mistake we had made. Cold, hungry and still rather jet lagged, D and I walked the streets for what seemed like and hour until we finally found a hotel within our budget that had one room available.

Right away D and I had a weird feeling. Kind of like we weren’t suppose to be there. Hoi An had a completely different feeling then Ho Chi Minh City and we wanted that feeling back! Now I’m not trying to be all negative about Hoi An. I know several people that LOVED Hoi An when they traveled there. I’m sure during the right time of year it is a wonderful place. It does have a beach near by mind you and I’m sure it gets nice and warm enough to go play on it but for us, it just had a feeling that we couldn’t really explain.

After we got settled in our hotel, D and I decided to go on a long walk to get to know the area a bit. We had planned on staying in Hoi An for a couple days and at this particular hotel for a night so we needed to find another place to stay as well.

We also realized we were starving and walked around the corner to a street lined with tailors and restaurants and sat down at the first one that have a few vegetarian items to choose from. We needed to recollect ourselves and talk about a few things. As soon as we parked our bums in chairs it began to pour. I mean it dumped big old rain drops and we watched as people scrambled to take cover. D and I decided we’d just stay there until the rain let up but realized after 30 minutes that it probably wasn’t going to and we were just going to have to brave it if we wanted to see anything.

To be honest, as happy as I was to be in this new country the weather was becoming a problem for me and D was finding out rather quickly that I wasn’t exactly happy thus far. See, I’m a sun bunny and having just left the midst of winter back home, I needed my sun.

At this point we both were wondering why we had left Ho Chi Minh in the first place. After another quick stop at wine bar (seriously, there was a little wine bar there!) to get out of yet another down pour I had a momentary melt down telling D that I just couldn’t handle the cold and rain. First of all, I didn’t pack ANY cold weather clothes and I was freezing. Second, this wasn’t really what I had in mind for our trip, walking around in torrential rain with a poncho on. He agreed that it wasn’t really what he had in mind either not to mention the charm and authenticity of the city was some what lacking as it was obvious it was build around tourism. Another one of our goals was to try to stay out of the super touristy places. So, the decision was made. We would head back south to the warmth and sunshine on the little bitty island of Phu Quoc.

But, we still made the most of Hoi An while we were there…

And that night when we got back to our hotel room D assigned me the responsibility of getting our tickets back to Ho Chi Minh and then to Phu Quoc Island…

I did forewarn him I had been ruined :)

Just kidding! This was a complete mistake that only happens when you are rushing to book a flight at 9pm for the next morning!

First Day of Spring Inspiration

Happy first day of Spring! I don’t know about you but spring happens to be my favorite time of year. I think it’s because everything gets the opportunity to start all over, begin again. But, still just as beautiful as it ever was.

Sunday was incredibly beautiful out and although it was snowing in most places around the valley, right above our little house on the hill was a circle of blue sky and sun. Honestly, it was exactly what we needed. After being in the sun and warm weather for a month straight, coming home to snow, cold and rain was a little disheartening

When I went outside in the morning to let the chickens out of their coop the birds were singing a lovely tune from the tree branches above and their was a hint of that familiar scent of spring in the air.

I love spring for so many reasons. First, I love watching all the trees, plants, grass and flowers grow again and come back to life. I get so excited when I see tulips starting to pop their heads out from beneath the dirt I can barely contain myself. And although we live in the Pacific Northwest and know better then to get too excited, I still always hope that this year we will get a dry, sunny and warm Spring.

I also happen to love the sound of lawn mowers being fired up and the smell of the seasons first fresh cut grass. I love the way the sun feels on my skin when I work in the yard or take the pups out for a walk around the vineyard. In a few weeks here I’ll be heading out into the garden to start getting things ready for the impending planting of an array of fruits, vegetables, herbs and flowers.

Oh how I love spring!

Spring also happens to be a great way to clean out the old and organize what’s left behind.

So today’s post is all about the top5 things I’m most excited for this spring!

1. First and foremost, spring colors! There is nothing else like it when you are just coming out of the dead of winter when all of the sudden you start seeing beautiful pastels and bright and fun colors everywhere. It starts to wake your senses and gives you a new found energy. I’m mean, pistachio and horizon? Beautiful!

2.My favorite flower: Pansies! My mom planted them every year and from the time I can remember I have absolutely loved this little gems. With their ability to withstand cooler temps they are often the first touch of life and color for many gardeners and will be a staple around our home as well.

3. Lambing Season! We bread our girls with Goober Jr in late November, early December. If you missed the post I wrote about Goober Jr. well, you can find it here. We are hoping he got all seven of our girls and if so, they should start lambing within the next 4 weeks up until early June. If you’ve never held a baby lamb oh my, you are missing out. Seriously the cutest little things ever.

4. Starting our garden. I can’t even begin to tell you how excited I am for this. Besides the fact that it’s just really fun to watch something you worked so hard on grow, it’s also equally as fun to walk out to the garden and harvest your dinner that day.

5. And last but not least, OUR WEDDING! How could I leave this one out? We are having a spring wedding in the backyard of D’s parents house in Las Vegas on May 18th, 2012! I’m already practicing signing my name Amanda Moore. Has a nice ring to it, doesn’t it?

Vegan Gluten-Free Morning Glory Muffins (nut-free)

I got this recipe from a friend after many months of craving these muffins on a daily basis. A lot of recipes out there for gluten-free and vegan baked goods leave me rather disappointed but these guys, they are simply delicious. In fact, I’m eating one right now as I write this.

Best of all, they can be altered to fit your taste-buds. Don’t like cranberry’s? Substitute them for cherries or heck, even chocolate chips and you have a whole new muffin!

If you are super daring, you could even reduce the amount of sugar you add and substitute it with something like agave or honey. That’s next on my list!

Whether you leave them as they are or change them to fit your liking, these morning glory muffins are as good as the old fashion kind your grandma use to make! Just without the butter, white flour, and eggs :)

How you make them:

Makes 24 large muffins (you can always cut the recipe in half for smaller batches)

Preheat oven to 350 degrees

Liquid Ingredient: Mix all ingredients together in a large bowl and let sit for 15 minutes.

1 quart soy milk

1/3 cup maple sugar

1 T molasses

1 1/2 cup canola oil

Add 1 tub of gluten-free oats

2 cup coconut (preferably unsweetened)

1/2-1 8 oz can of crushed pineapple with juice

1 1/2 grated carrot or zucchini

3 cups any dried fruit

Dry Ingredients: Mix together then add to liquid ingredients .

3 cups G/F baking mix

2/3 cup turbinado sugar plus 1 tablespoon

1 3/4 cup brown sugar

4 tablespoons baking powder

1 1/2 tablespoons salt

2 tablespoons cinnamon

1 tablespoon nutmeg

Once all ingredients are mixed together scoop out enough mixture to fill to the top of a greased muffin tin.

Bake for 30 minutes and then test by putting a toothpick through several of the middle parts of the muffins.

When done, enjoy!

The Ring

I’m starting to wonder if I’m ever going to recover. This is, by far, the worse case of jet lag I have ever experienced. So far every night this week, despite being incredibly tired, we’ve had a hard time falling asleep, usually doing so around 11pm only to wake up again between 1am and 2:30am. Last night was a little better but not enough so to say we’ve turned a corner. I know. I’m whining. I’m sorry about that. Really, I am but you see, I had plans. BIG PLANS for when I got home. I have projects and organizing, crafting and blogging to do and this little ol’ jet lag is crampin’ my style in a big old intrusive way!

Okay, now that I got that out of the way I feel better but what will make me feel even more amazing is getting a full 8 hours of sleep so that when I wake up at my normal time between 6 am and 7:30 am, I am refreshed, clear headed, and ready to begin my day! All in good time, right?

So, I know my post on Wednesday mentioned that every Friday I’d be highlighting one of the places we went on our trip but the thing is, we haven’t exactly got around to going through our pictures so that will start NEXT Friday. Today, I thought I’d share a bit about something exciting that is on the near horizon. Our wedding!

As most of you know, D proposed to me the day we left for our trip. If you missed it you can read all about it here! It was such a surprise and we are so excited to begin this next journey together.

D and I are pretty simple people and we’ve always wanted a really small and intimate wedding and have decided to get married in his parents backyard in Las Vegas. D grew up there and his family is still there so my family is packing their bags and heading to LAS VEGAS for our wedding on May 18th!

I know, so soon! But the truth is, we never though of ourselves having a long engagement nor a big wedding and the temperatures in Vegas after May are rather warm to say the least, May sounded exactly right.

As for all the details well, those are in the making and I will post about them as we finalize but we want simple, easy, and of course, family and fun!

In the meantime, I thought I would give you a peek at the beautiful ring D proposed with. It’s exactly what I’ve always wanted and envisioned wearing on my left had for the rest of my life. I still can’t stop starring at it even after a month!

Outdoor Living Space

Well, we are back from our month long trip traveling around SE Asia (mostly Thailand) and despite the jet lag (I’m writing this at 3:45 am) we are happy to be home and ready to start tackling some of the projects we put off until after our travels.

Over the next few Fridays I will be posting about each place we went on our trip in more detail with photos and I’m looking forward to sharing more of our experiences with you all!

Our trip to SE Asia has really inspired both D and I to focus more on our outdoor space making it one we can enjoy being in during the warmer months and since we are getting rid of cable with the intention of being more productive both inside and out, I think having a space that we love spending time in outside is just as important as the space we live in inside.

Nothing is better then sitting on the deck  on a warm summer night sipping on a crisp glass of white wine and looking out into the vineyard. We’ve been trying to put our heads together and think of cost effective ways to create the ideal space on our deck as well as our porch below which is currently a big piece of wasted space.

To get us in the mood and get the creative juices flowing, I have been researching outdoor living spaces to see what other people have done and gain some useful ideas from that area.

Lazy days and beaches to big city and bright lights!

Hello everyone from Bangkok!

Wow! It seems like so long ago we landed in Ho Chi Minh and now we are down to four days. Its been such a amazing time!

So I should forewarn you, this isn’t going to be a long post about where we’ve been and what we’ve done. Honestly, I think I need to tell those stories with the pictures we’ve taken along the way. So, when we get back and have a little time to settle in, D and I will edit all our photos and I will post in more detail about each place we visited. It’ll be our trip to SE Asia series!

But here is a little teaser to get you hooked! Think renting a motorbike and driving around a small islamd visiting a lonely quiet beach, seeing heards of cows just walking on the road. An overnight 15 hour train ride in seats that didn’t fold back where I got violently sick and a Thai woman took care of me. An organic Thai farm cooking school where we made a six coarse meal including our own curries in a traditional mortar using a pestel. A street night market that covered block after block after block where we ate, shopped and you guessed it, WALKED! 10 plane rides, getting scammed on a bus ride, two ferry rides and another beautiful island!

Relaxing on the beach, an amazing host named Annie who tailored vegetarian dinners for us each night. 10 Thai Chili spicy meals!!! A snorkeling trip to waters so blue it’s hard to imagine its real, snakes falling out of trees onto tables, an animal shelter where we got to play with kittens and walk dogs, and lots of relaxing beach time!

Now, we are in bright lights and one big city to finish it all off!

I’m looking forward to sharing with you all in more detail when I get back but for now, hope you all are well and we will see you soon!!
