I love oatmeal for breakfast and it’s been a go to for quite some time for me. I always put the same ingredients in it, oats, nut milk, a little vanilla extract, and cinnamon and it is always delicious. This time though I decided to try a little something different. I was craving a baked good of some sort and decided to through my oatmeal in the oven instead of on the stove. The corners were the perfect amount of crispy and the center was soft and gooey. It reminded me of cinnamon roll and is so delicious on a cool fall morning. Enjoy!
- For Oat Bake:
- ¾ cup gluten free or regular oats
- ½ tsp vanilla extract
- ½ tsp cinnamon
- ½ cup applesauce
- ¼ cup nut milk of your choice
- 1 tbsp coconut butter
- For Glaze:
- 2 tbsp sunflower butter
- 1 tbsp coconut butter
- Preheat oven to 375 degrees.
- Mix together all baked oat ingredients until thoroughly combined and pour into a small greased ramekin.
- Bake for 30 minutes
- Mix sunflower butter and coconut butter together. Once baked oats are finished, remove from oven and turn upside down onto plate. Remember, ramekin will be very hot so use a pot holder.
- Pour glaze over baked oats and enjoy!
