Pumpkin Parfait

Okay friends, this is HANDS DOWN the best dessert I’ve made thus far. I am a huge fan of custards and brulees but since I no longer eat dairy I can no longer feast on my favorite treats. Until now!

I found this recipe over at Forks and Beans but modified it a bit to fit my taste buds. I can’t even wait to play around with all the different flavors I can make. Chocolate, vanilla, lavender (yep!), mint and chocolate, etc. If there is one thing you do for yourself today it’s make this dessert!

Ingredients
  • Crust:
  • ½ c. macadamia nuts
  • ½ c. almonds
  • 3 dates, depitted and chopped
  • Filling:
  • ¾ c. cashews, soaked for 3 hours
  • ½ c. canned pumpkin
  • ½ c. raw (or non-dairy) nut milk
  • 2½ Tb. coconut oil, melted
  • 2 Tb. agave nectar
  • 1 tsp cinnamen
  • ½ tsp nutmeg
  • ¼ tsp allspice
  • Macadamia Nut Filling:
  • ¾ c. macadamia nuts, soaked in ½ c. water for 30 minutes
  • 2 Tb agave nectar
  • splash of vanilla extract
Instructions
  1. Crust:
  2. In a food processor, pulse until crumbly and set aside.
  3. Filling:
  4. In a blender, combine all the ingredients, except for the coconut oil. If the consistency is too thick, add 1 tbsp of water at a time until it is creamy and smooth like pie filling.
  5. Add the oil ½ tbsp at a time. I made the mistake of adding it all at once and ended up having to add more spice because the coconut taste was very obvious.
  6. Assembly:
  7. First layer is ¼ of the nut mixture pressed firmly into the bottom of whatever serving dish you are using. I used a mason jar.
  8. Next layer is the pie filling. Use about ¼ of the mixture.
  9. Layer with macadamia nut whipped cream.
  10. Another layer of pie filling.
  11. Crumble with pie crust.
  12. Repeat for 2 layers.

      Yes, you have to make it! My husband and I scrapped the dish out and then pretty much licked it clean. lol
